Mediterranean Sourdough Veggie Toast

Ingredients:

  • 2 slices sourdough bread
  • 3 tbsp hummus
  • 1/2 cup cherry tomatoes (halved)
  • 1/2 cucumber (sliced)
  • 2 tbsp olives (sliced, black or green)
  • 2 tbsp feta cheese (crumbled)
  • 1 tbsp olive oil
  • Salt & black pepper (to taste)
  • Pinch of dried oregano or chili flakes (optional)
  • Fresh parsley or basil (optional, for garnish)

Step-by-Step Recipe:

  1. Toast the bread
    Toast sourdough slices until golden and crispy.
  2. Spread the base
    Spread a generous layer of hummus on each slice.
  3. Add veggies
    Top with cherry tomatoes, cucumber slices, and olives evenly.
  4. Add cheese
    Sprinkle crumbled feta cheese over the top.
  5. Season
    Drizzle olive oil, then add salt, black pepper, and oregano or chili flakes.
  6. Garnish & serve
    Add fresh herbs if you like and serve immediately.

Tips:

  • You can add avocado or roasted veggies for extra flavor.
  • Use garlic hummus for a stronger taste.
  • Best served fresh and slightly warm.
