For the Cake:

  • 1 cup all-purpose flour
  • ¾ cup cocoa powder (unsweetened)
  • 1 cup sugar
  • 1 cup active sourdough starter (or discard)
  • 2 eggs
  • ½ cup milk
  • ½ cup vegetable oil (or melted butter)
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp salt

Optional (for extra richness):

  • ½ cup chocolate chips

  1. Preheat Oven
    Preheat to 175°C (350°F). Grease and line a cake pan.
  2. Mix Wet Ingredients
    In a large bowl, whisk sourdough starter, eggs, milk, oil, and vanilla until smooth.
  3. Add Dry Ingredients
    Sift in flour, cocoa powder, sugar, baking soda, baking powder, and salt. Mix gently until combined.
  4. Make Batter Richer (Optional)
    Fold in chocolate chips for extra gooey texture.
  5. Rest the Batter
    Let the batter sit for 10–15 minutes (helps sourdough develop flavor).
  6. Bake
    Pour into pan and bake for 30–35 minutes or until a toothpick comes out with a few moist crumbs.
  7. Cool & Serve
    Let it cool before slicing for a fudgy, rich texture.
