Ingredients (1 serving):

  • 1–2 slices sourdough bread
  • 1 ripe avocado
  • 1 egg
  • 1 tsp lemon juice
  • 1 tbsp olive oil (optional)
  • Salt, to taste
  • Black pepper, to taste
  • Chili flakes (optional)
  • 1 tsp vinegar (for poaching egg)
  • Fresh herbs (parsley, cilantro, or microgreens)

👩‍🍳 Step-by-Step Recipe:

1. Toast the Sourdough
Toast sourdough slices until golden, crispy outside, and slightly chewy inside.


2. Prepare the Avocado
In a bowl, mash avocado with:

  • Lemon juice
  • Salt
  • Black pepper

Mix until creamy but slightly chunky for texture.


3. Poach the Egg

  • Bring a pot of water to a gentle simmer (not boiling)
  • Add 1 tsp vinegar
  • Stir water to create a whirlpool
  • Crack egg into a small bowl, gently slide it into water
  • Cook for 3–4 minutes until whites are set and yolk is soft
  • Remove with a slotted spoon and drain

4. Assemble the Toast

  • Spread mashed avocado generously on toasted sourdough
  • Place poached egg on top

5. Finish & Serve
Drizzle olive oil (optional), sprinkle:

  • Salt
  • Black pepper
  • Chili flakes
  • Fresh herbs or microgreens
