Soft & Fluffy Sourdough Cinnamon Rolls with Cream Cheese Glaze

Ingredients:

For the Dough:

  • 3 ½ cups all-purpose flour
  • 1 cup active sourdough starter
  • 1 cup warm milk
  • ¼ cup sugar
  • 1 egg
  • ¼ cup melted butter
  • 1 tsp salt

For the Filling:

  • ½ cup brown sugar
  • 2 tbsp cinnamon
  • ¼ cup softened butter

For the Cream Cheese Glaze:

  • 4 oz cream cheese (softened)
  • 2 tbsp butter (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 1–2 tbsp milk (as needed)

👩‍🍳 Step-by-Step Recipe:

  1. Prepare the Dough
    In a large bowl, mix sourdough starter, warm milk, sugar, egg, and melted butter. Add flour and salt, then mix into a soft dough.
  2. Knead the Dough
    Knead for 8–10 minutes until smooth and elastic.
  3. First Rise (Bulk Fermentation)
    Cover and let the dough rise at room temperature for 4–6 hours, or until doubled in size.
  4. Roll Out the Dough
    Roll the dough into a large rectangle (about ¼ inch thick).
  5. Add Filling
    Spread softened butter evenly, then sprinkle brown sugar and cinnamon mixture.
  6. Shape the Rolls
    Roll the dough tightly into a log and cut into even slices.
  7. Second Rise
    Place rolls in a greased baking dish, cover, and let rise for 1–2 hours until puffy.
  8. Bake
    Bake at 180°C (350°F) for 20–25 minutes until golden brown.
  9. Make the Glaze
    Beat cream cheese, butter, powdered sugar, vanilla, and milk until smooth and creamy.
  10. Finish & Serve
    Spread glaze over warm rolls and serve soft and gooey.
