Crispy Sourdough Waffles with Berry Compote & Maple Drizzle

Ingredients:

For the Waffles:

  • 2 cups all-purpose flour
  • 1 cup active sourdough starter
  • 1 ½ cups milk
  • 2 eggs
  • 3 tbsp melted butter (or oil)
  • 1 tbsp sugar
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 tsp vanilla extract

For the Berry Compote:

  • 1 cup mixed berries (strawberries, blueberries, raspberries)
  • 2 tbsp sugar
  • 1 tbsp lemon juice
  • 2 tbsp water

👩‍🍳 Step-by-Step Recipe:

  1. Prepare the Batter (Overnight Best)
    In a bowl, mix sourdough starter, flour, and milk. Cover and let it rest overnight (or at least 6–8 hours).
  2. Add Final Ingredients
    Stir in eggs, melted butter, sugar, vanilla extract, and salt.
  3. Activate the Batter
    Just before cooking, add baking soda and gently mix (this makes waffles light and airy).
  4. Preheat Waffle Maker
    Heat your waffle iron and lightly grease it.
  5. Cook the Waffles
    Pour batter into the waffle maker and cook until golden brown and crispy.
  6. Make the Berry Compote
    In a saucepan, combine berries, sugar, lemon juice, and water. Cook on medium heat until berries soften and sauce thickens (5–7 minutes).
  7. Assemble & Serve
    Place waffles on a plate, spoon warm berry compote on top, and drizzle with maple syrup.
