- Handful baby spinach
- 2 tbsp olive oil
- Salt & black pepper (to taste)
- Optional: feta cheese or mozzarella

- Make herb butter
Mix softened butter with garlic and mixed herbs until well combined. - Toast sourdough
Brush slices with olive oil and toast until golden and crisp. - Layer base
Spread cream cheese or hummus on the first slice. - Add fresh layers
Place spinach, avocado slices, and cherry tomatoes on top. Season lightly with salt and pepper. - Stack it up
Add second toast slice and repeat layering. Finish with third slice. - Final touch
Spread herb butter lightly on the top slice and sprinkle optional feta or mozzarella.
