- 2–3 tbsp cream cheese or mayo
- 1 tsp lemon juice
- ½ tsp lemon zest
- ½ tsp dried oregano or dill
- ½ cup shredded mozzarella cheese
- Fresh parsley (for garnish)

- Prepare the fish
Season fish with salt, pepper, and olive oil. Grill or pan-sear until golden and flaky. - Make the creamy spread
Mix cream cheese (or mayo), lemon juice, zest, and herbs in a small bowl. - Toast the sourdough
Lightly butter sourdough slices and toast until crisp and golden. - Assemble the melt
Spread creamy lemon-herb sauce on bread. Add cooked fish on top. - Add cheese & melt
Sprinkle mozzarella generously over fish. Grill or bake for 3–5 minutes until melted and bubbly. - Finish & serve
