In a bowl, mix sourdough starter, flour, and milk. Cover and let it rest overnight (or at least 6–8 hours). - Add Final Ingredients
Stir in eggs, melted butter, sugar, vanilla extract, and salt. - Activate the Batter
Just before cooking, add baking soda and gently mix (this makes waffles light and airy). - Preheat Waffle Maker
Heat your waffle iron and lightly grease it. - Cook the Waffles
Pour batter into the waffle maker and cook until golden brown and crispy. - Make the Berry Compote
In a saucepan, combine berries, sugar, lemon juice, and water. Cook on medium heat until berries soften and sauce thickens (5–7 minutes). - Assemble & Serve
