- 100 g active sourdough starter (well-fed & bubbly)
- 350 g lukewarm water
- 500 g bread flour
- 10 g salt
- Rice flour (dusting ke liye)

- Thori si cranberries (sirf look ke liye)
- Extra flour (snowy finish ke liye)
🍞 Method (Easy, Desi & Homemade Style)
1️⃣ Dough Mix
Ek large bowl me starter aur water achi tarah mix karo.
Ab bread flour add karo aur mix karke rough sa dough bana lo.
Cover karke 30 minutes rest do — isse dough strong hota hai (autolyse).
2️⃣ Salt Time
Salt add karo aur dough ko gently fold karo.
Dough thori sticky lagegi — tension mat lo, bilkul normal hai 👍
3️⃣ Stretch & Fold
Har 30 minutes baad:
- 3–4 stretch & folds karo
- Total 3 rounds
Dough dheere dheere smooth aur elastic ho jayegi.
4️⃣ Bulk Fermentation
Bowl cover karke dough ko 6–8 hours room temperature par rest do.
Dough airy ho jaye aur lagbhag double ho — ye sign hai ke ready hai.
5️⃣ Shaping
Surface par halka flour lagao.
Dough ko gently round shape do.
Basket ya bowl me seam side up rakh do.
6️⃣ Cold Proof
Dough ko fridge me overnight (10–14 hours) ke liye rakh do.
Is step se flavor next level ho jata hai ✨
7️⃣ ⭐ Star Scoring
Bake se pehle dough par halka flour dust karo.
Sharp blade se center me star design banao.
Rosemary ko softly press karo — zyada deep nahi.
8️⃣ Baking
Oven ko 230°C par preheat karo (Dutch oven ke sath).
- 20 minutes covered bake
- 20–25 minutes uncovered bake
Crust golden, crackly aur bakery-style ho jayegi 🤍
❄️ Final Touch
Bake hone ke baad upar se halka sa flour dust karo for snow look.
Cranberries sirf decoration ke liye hain — bake karna zaroori nahi.
