Vegetables & Potatoes:
- 3–4 medium potatoes, peeled and sliced into rounds
- 1 onion, diced
- 1 celery stalk, chopped
- 1 bell pepper, diced
- Salt and additional black pepper, to taste
- A few stalks green onions, chopped (for garnish)
Egg & Cheese Mixture:
- 4 eggs
- 120 ml (½ cup) milk
- 200 g (7 oz) cheese, grated (cheddar, mozzarella, or a mix)
👩🍳 Instructions
1️⃣ Marinate the Chicken
- Dice chicken fillets into bite-sized cubes.
- In a bowl, combine soy sauce, minced garlic, curry powder, dill, parsley, and black pepper.
- Toss chicken in the marinade, cover, and let rest 15–20 minutes.
2️⃣ Prepare the Vegetables & Potatoes
- Slice potatoes into thin rounds.
- Dice onion, celery, and bell pepper. Set aside for layering.
3️⃣ Preheat Oven
- Preheat oven to 180°C (350°F).
- Grease a medium-sized baking dish with a drizzle of oil or a little butter.
4️⃣ Layer the Bake
- Arrange half of the potato slices on the bottom of the dish. Season lightly.
- Spread onion, celery, and bell pepper evenly over the potatoes.
- Add the marinated chicken on top.
- Layer the remaining potato slices over the chicken and vegetables.
